Chickpea Tuna Recipe

I cant believe that I didn't try this recipe sooner! I couldn't believe how simple and delicious it was. My favourite thing about this recipe is how you can pair it with anything. For example you can put it in a jacket potato; add to a salad; use as a sandwich or wrap filling and I'm sure there are so many other options!

Ingredients
- 1 can chickpeas 
- 1 cup sweetcorn 
- 1/2 red onion
- 1/4 cup vegan mayo
- 1 tbsp whole grain mustard 
- salt & pepper

Method 
1. Drain your chickpeas and place in a bowl.
2. Mash your chickpeas. Now fully, you want some to be whole still.
3. Add in your sweetcorn and red onion and stir to combine.
4. Mix in the mayo and mustard and mix well to combine.
5. Last add salt and pepper to taste.
