Pecan Shortbread Cookies

I wanted to make some cute seasonal cookies that are perfect for autumn! First I found some leaf shaped cookie cutters and felt inspired to make some pecan flavoured shortbread.

- 125g Cold Vegan butter
- 180g Plain flour
- 60g Castor sugar 
- 1 tsp Vanilla extract 
- 40g Chopped pecans
1. Pre heat the oven to 170c.
2. Rub together the butter and flour with your fingers to create a breadcrumb consistency.
3. Add in the castor sugar, vanilla extract and pecans.
4. Combine to create a dough.
5. Wrap in cling film and place in the fridge for 15 mins.
6. Flour your surface and roll out your dough to the thickness you desire.
7. Cut out your shapes and place on a lined baking tray.
8. Place back in the fridge for 30-60 mins.
9. Remove from the fridge and cook in the oven for 10-12 mins. 
10. Let cool and enjoy!
