Vegan Pumpkin Spice Cookies

One of my favourite things about autumn is eating autumnal foods. By this I mean you are eating indoors and you can settle down and get cosy and eat all of the comfort foods and treats that are associated with winter. It doesn't get any more festive then a pumpkin treat! 

These cookies are so simple, vegan and can be made in big batches and stored in the freezer to cook whenever you get a craving for them! 
- 225g Vegan butter
- 300g Golden castor sugar
- 180g Plain flour 
- 180g Self raising flour
- 1 tsp Bicarbonate of soda 
2 tsp Pumpkin spice

1. Preheat the oven to 180c. (When you're going to bake your cookies)
2. Cream the butter and sugar together.
3. Add in all the other ingredients.
4. Stir well to combine everything.
5. Using an ice cream scoop turn your dough into cookie balls. 
6. Freeze your balls on a flat tray for ideally 24 hours.
7. Cook from frozen on foil lined trays. (4 max per tray- they spread a lot)
8. Cook for 8 minutes and then turn and cook for another 6.
9. Allow to cool and set completely before moving and eating.

I didn't cook them all so I have some remaining in the freezer for whenever I want one!

Makes 12 cookies
Depending on your scoop size.
