Vegan Berry Brownies

When it comes to making vegan brownies the struggle is real! It is so hard to make the perfect gooey brownie without eggs. I have been experimenting and searching for the perfect recipe that you would never be able to tell is vegan! 
I am so glad that I have finally found it and can't wait to share it with you! Even if you're not vegan you NEED to try this recipe. You will never want to put eggs in your brownies again!
- 2 Flax eggs (2 tbsp ground flax, 6 tbsp hot water)
- 1 1/4 cup Plain flour
- 6 tbsp Cocoa powder
- 6 tbsp Cacao powder
(I like to use both but you can make up 12tbsp of one)
- 1 tsp Baking powder
- 3/4 cup Vegan butter 
- 1 1/4 cup Light brown sugar 
1 tsp Vanilla extract 
- 75ml Plant milk (I use almond)
- Toppings of your choice! (I used Dark chocolate chunks, raspberries and blackberries)

1. Preheat your oven to 180c and line your baking tin with greaseproof paper.
2. Start by making your flax egg. You do this by mixing together your ground flax and hot water. - place to one side while you move onto the next step.
3. Melt your butter and mix in the sugar and vanilla extract. 
4. In a separate bowl mix your flour, baking powder, cocoa powder and cacao.
5. Pour in your wet mixture, flax egg and plant milk.
6. Gently turn the mixture to combine without over mixing. 
7. Pour into your lined tin and add your toppings.
8. Bake for 25-30 minutes depending on how gooey you like your brownies. 
9. Leave to cool and fully set before removing from the tin. 
10. Cut into squares and enjoy!

I like to use a mixture of cocoa powder and cacao for the added iron and vitamins.

This is my berry recipe but you can truly add any topping you want. 
I really want to try peanut butter, Oreo, Biscoff, pumpkin, hazelnut and so many more!!
