Pumpkin Cranberry Pecan Granola



This is my go to recipe for granola and especially in autumn! I just can't get enough of this recipe, its so good. This recipe just make me feel so autumnal and its so easy to make that id rather make this then buy any. When it comes to vegan granola you are also a bit limited on what ones you can get so this solves that problem! 

Ingredients

- 1 cup Oats

- 1/4 cup Maple syrup

- 1/4 cup Pumpkin seeds

- 1/2 cup Pecans 

- 1 tsp Cinnamon

- 1/2 cup Cranberries 


Method

1. Mix together your oats, maple syrup, pumpkin seeds, pecans and cinnamon.

2. Once mixed together lay on a lined baking tray and press down with the back of your spoon. 

3. Bake for 10 minutes at 180c.

4. Turn your granola bringing the edges to the middle. 

5. Place back in the oven for 10 more minutes. 

6. Once fully cooked allow to fully cool and set.

7. When your granola is cool and set mix in the cranberries.

8. Store in an airtight container and enjoy!
