Peach & Raspberry Pie

You want a dessert that tastes delicious and you can put together really quickly? Then this is the one for you!! I'd never made a pie like this before, the filling choice and the more complexed weave on the top. Having said that I am so happy with the end result! It tastes amazing and looks great too!

- 2 Ready rolled puff pastry sheets
(You can make your own but these are great and save a lot of time!)
- 2 400g tins of peaches
- 1 cup Frozen Raspberries 
- 1/3 cup Cornflour
- 1/2 cup Coconut Sugar
- 1 tsp Cinnamon
- 1 tbsp Plant Milk

1. Preheat oven to 180c.
2. Roll out pastry to fit the bottom of your pie dish.
3. In a mixing bowl add your drained peaches and frozen raspberries.
4. Gently mix in your cornflour, coconut sugar and cinnamon. 
5. Pour into your pie dish and place to the side.
6. With your other sheet of pastry cut into strips. 
7. Layer to create a lattice effect on top of your pie and press the edges down to seal.
8. Using a pastry brush, brush over your plant milk.
9. Place in the oven for 20 minutes.
10. Turn your pie around and cook for a further 20 minutes to ensure your pie brown evenly.
11. After them 40 minutes pull your pie out and cover with foil.
12. Return to the oven for the last 10 minutes.
13. Allow the pie to cool before cutting which will set the filling and make it easy to serve.

Best served with Ice cream/ Custard!
