Banana Berry Pancakes

When it comes to pancakes it is always a little difficult to find a good recipe that you can eat as a vegan. These pancakes are the easiest to make, only containing a few simple ingredients that you're bound to already have in and you'd never know that they're vegan and actually healthy for you!

- 3/4 cup Oats (Blended to flour consistency)
- 3/4 cup Almond milk (Other plant milk could work)
- 1 & 1/2 banana (Save the other half to top)
- Handful Blueberries
- Handful Raspberries 
- Handful chopped Mango 

1. Start by blending your oats to make a flour consistency. 
2. Add in half a banana with 1/4 cup of milk at a time and continue until you have a batter mixture.
3. Add in your fruit and gently mix in by hand.
4. In a frying/ pancake pan heat coconut oil on a medium heat. 
5. Pour in your mixture for your desired pancake size.
6. Allow to cook for a few minutes before turning. 

This recipe made 5 smaller pancakes but you can make 2/3 larger ones.
