Five Vegan Breakfast Ideas

Breakfast my be my favourite meal and since becoming vegan it has been so much more fun to find and experiment with different recipes and ideas. Some of these recipes are quicker them others and of course I don't get the time to eat like this every day! Some of these you can make ahead to save time though. I hope you find these helpful to inspire your breakfast choices.
Banana Waffles 
To make banana waffles I use a really simple recipe that tastes amazing every time!
You will need a waffle maker but they can be very inexpensive and small to store in your kitchen.

WAFFLES
Banana Waffles
(Makes 3 large waffles)
1 Banana
1 cup Flour
1/2 cup Almond milk
1 tsp Baking powder
1 tbsp Maple syrup

1. Mash the banana.
2. Mix with the maple syrup.
3. Add flour, baking powder and almond milk.
4. Mix altogether to get a batter.
5. Cook in a waffle maker.

You can freeze these and defrost easily at a later stage for when you're in a hurry and need your waffle fix! They will still taste just as fresh as when they are first made. 
Smoothie Bowl 
If you want a light breakfast and have a lot fresh or frozen fruit this is perfect.
There are a lot of smoothie recipes out there and any of them work great as long as you have a thick consistency! 
Tip- The best way to thicken a smoothie is to use frozen bananas!

Sourdough Toast 
This is such a quick and easy breakfast! 
You can add anything you like. As shown above I normally opted for some kind of nut butter and fresh berries or homemade jam.
If you have the time I like to make a fresh sourdough loaf to last me the week and enjoy with a variety of toppings. 
Banana Pancakes 
To make these I use the same ingredients as my waffles but add in some berries to make them a little bit tastier!

PANCAKES
Pancakes are such a fun breakfast treat and a great way to use up bananas!
(Makes 1 person serving)
1 Banana
1 cup Flour
1/2 cup Almond milk
1 tsp Baking powder
1 tbsp Maple syrup
1/4 cup Berries

1. Mash the banana.
2. Mix with the maple syrup.
3. Add flour, baking powder and almond milk.
4. Mix in your berries.
5. Cook in a non stick frying pan for a couple of minutes each side.
Yogurt & Granola
Another quick and simple breakfast when I don't have much time is a yogurt and granola bowl. I find this great when I take breakfast out with me.
You can change this up however you want by adding different yogurt choices, granola and berries or fruit of your choosing.
