Coffee Walnut Banana Cake - Vegan

Everyone always likes to make a simple banana bread but I thought I would make it a little bit more interesting. I changed up my go to banana bread recipe that I always use and add in some new ingredients. This is such a fun recipe to make and the whole thing is vegan, healthy and to die for. 
Ingredients

Bread
- 2 Bananas
- 80g Coconut oil
- 100g Coconut sugar
- 75g Self raising flour
- 150g Plain flour
- 3 tsp Baking powder
- 3 tsp Soft coffee granules 
- 1/4 cup Walnut pieces

Frosting
- 1 1/2 cup Raw cashews (soaked for 20 mins in boiling water)
- 1/4 cup Maple syrup
- 1/3 cup Strong coffee
- 1 tsp Vanilla extract 

Method

Bread
Preheat oven to 200c.
1. In a large bowl mash the bananas with a fork and add melted coconut oil.
2. Mix in the coconut sugar.
3. Next add in the self raising flour, plain flour, baking powder, walnut pieces and coffee granules.
4. Mix together. 
5. Pour into your greased baking tin.  (8x8 recommended)

Frosting
1. Soak the cashews for 20 minutes in boiling water.
2. Combine 1/3 cup boiling water with 1 tsp coffee granules and leave to cool.
3. Drain your cashews and add all ingredients to a blender.
4. Blend together until completely combined and smooth. 
5. Leave to cool/ set in the fridge for at least an hour. (Overnight is best)
6. Smooth on top of your bread. 
7. Top with walnuts for decoration. 

Cuts into 9 squares and can be stored in an airtight tin up to 3 days. 
(If they last that long)
