Apple Pecan Crumble

35 minutes cook time
Serves 4
INGREDIENTS 
FILLING
- 3 Apples
- 1 tbsp Vegan butter
- 1/2 cup Brown sugar
- 1/4 tsp Cinnamon 
- 1/4 tsp Nutmeg 

TOPPING
- 1/2 cup soaked Dates
- 1 cup Oats (1/2 cup blended)
- 1/4 cup Desiccated coconut
- 1/4 cup chopped Pecans
- 2 tbsp Maple syrup

METHOD
FILLING
1. Preheat oven to 180c. 
2. Cut apples to small cubes.
3. In an oven proof dish mix the apples with vegan butter, brown sugar, cinnamon and nutmeg.
4. Cook in the oven at 180c for 15 minutes. 
5. While the filling is cooking make the topping!

TOPPING
1. Sock the dates in boiling water for 10 minutes.
2. In a blender combine 1/2 cup of oats, soaked dates and coconut.
3. Blend until a sticky consistency.
4. Add the chopped pecans, other 1/2 cup oats and maple syrup.
5. Mix all together.
6. Add to the top of your apples.
7. Bake for 20 minutes.


Served with vegan vanilla yogurt and homemade vegan chocolate sauce.
