Four Ways To Use Up Bananas

As the weather gets warmer our bananas just aren't lasting as long! With that in mind and not wanting to waste them, I have these four simple recipes thats are my go to when this happens. I have put together four different ideas that make great use of your bananas. 
MUFFINS
I have made two different types of muffins. I love them both and can't wait for you to try them!

Chunky Monkey Muffins 
(Makes 4 large muffins)
1 Banana
1 tbsp Maple syrup
1/2 cup Almond milk
1 cup Plain flour
1tsp Baking powder
1/2 tsp Bicarbonate of soda
1/3 cup Dark chocolate chunks
1/4 cup Pecans
3 tbsp Smooth peanut butter

1. Preheat oven to 180c
2. Mash the banana & add the maple syrup and whisk.
3. Add the flour, baking powder & bicarbonate of soda.
4. Stir to create a thick batter.
5. Add the chocolate, pecans & peanut butter.
6. Gently turn to combine.
7. Divide into 4 muffin cases.
8. Bake for 30 mins - Rotate half way through baking.

Nutella Swirl Muffins
(Makes 15 smaller muffins)
2 1/2 Bananas
1 tbsp Maple syrup
1 cup Plain flour
1 tsp Bicarbonate of soda
2 tsp Peanut butter
Nutella

1. Preheat the oven to 180c
2. Mix everything together except peanut butter & nutella.
3. Swirl in the peanut butter and turn gently so it's not mixed in.
4. Pour evenly into your cases.
5. Top with a small dollop of nutella and swirl over the top with a spoon.
6. Bake for 15 mins. 
BANANA BREAD
This must be the most popular recipe that people of to when they have bananas that need using up! It's easy to see why as its just such a quick recipe and tastes so yummy! I have a vegan banana bread recipe already on the blog- Check it out!
CARROT CAKE BANANA BREAD
PANCAKES
Pancakes are such a fun breakfast treat and a great way to use up bananas!
(Makes 1 person serving)
1 Banana
1 cup Flour
1/2 cup Almond milk
1 tsp Baking powder
1 tbsp Maple syrup
1/4 cup Berries

1. Mash the banana.
2. Mix with the maple syrup.
3. Add flour, baking powder and almond milk.
4. Mix in your berries.
5. Cook in a non stick frying pan for a couple of minutes each side.
WAFFLES
Banana Waffles
(Makes 3 large waffles)
1 Banana
1 cup Flour
1/2 cup Almond milk
1 tsp Baking powder
1 tbsp Maple syrup

1. Mash the banana.
2. Mix with the maple syrup.
3. Add flour, baking powder and almond milk.
4. Mix altogether to get a batter.
5. Cook in a waffle maker.
