Carrot Cake Banana Bread - Vegan

 I have made this really easy vegan carrot cake banana bread. This recipe is great to use up leftover bananas and I'm sure you already have all the ingredients hiding in your cupboard!
- 2 Cups Plain flour
- 1 tsp Bicarbonate of soda 
- 3/4 tsp Baking powder 
- 1 tsp Cinnamon 
- 1 1/2 cups Mashed banana 
- 3/4 Cups Grated carrot 
- 1/2 Cup Maple syrup 
- 1/4 Plant milk (I used almond)
- 1/4 Cup Oil or additional milk if opting for oil free
- 2 tsp Vanilla extract 

For the icing we made vegan butter icing and added some grated carrot!
1. Preheat the oven to 180c. 
2. Grease your load tin with vegan butter.
3. Combine all of your dry ingredients.
4. In a separate bowl combine all of your wet ingredients.
5. Pour wet into dry and stir together to form a batter. 
6. Smooth into your prepared loaf tin. 
7. Bake in the centre of the oven for 30-40 minutes. 
- Check to make sure it isn't browning too much- If it is cover with foil and return
to the oven.
- To check if your loaf is cooked- insert a toothpick and if it comes out clean it
is cooked. 
8. Allow to cool fully before icing (For the icing we made vegan butter icing and added some grated carrot!) and cutting. 
9. Enjoy for days (If it lasts that long!)
 The great thing about this banana bread is you can make it into any type you want! We added cinnamon and carrot this time but you can add any extras you wish.
These could be different
- Fruits (Strawberry, cherry, blackberry eat ...)
- Dried fruits (Raisins, mango, apricot ect ...)
- Chocolate chips
